Basil!

Caprese

We planted a garden in the yard earlier this year…and much to my surprise, things have actually grown in it! Among them, several nice looking basil plants.

We harvested a whole bunch of basil this weekend. I put it on top of fish for one meal, on top of chicken for another. We blanched some more and froze it for later.

Then, last night, we had this tasty treat as part of our dinner. Caprese is so easy to put together; I think we’ll be doing this one again soon. Just thought I’d share the photo. It was pretty tasty!

Vegi City

Vegi City is a cool new program the folks at Dream Center Peoria have started, in an effort to teach kids how to become self-sufficient by learning about food – from seed to plate.
